Sleep With the Fishies (Dinner Recipe)

This is my contest entry into the Pompeian Time to Change Your Oil Recipe Contest



For this recipe you will need:



1 box of original flavored couscous
8 pieces tilapia
1 small onion diced into small pieces
8 small cloves (or 4 large) of garlic diced into small pieces
1/2 of a red bell pepper diced into small pieces
3 tbsp crushed tomatoes from the can
4 tsp seasoned salt
2 tsp ground red pepper
2 tbsp of capers
1/2 tsp parsley
2 tbsp Pompeian OlivExtra Premium Mediterranean Blend

Combine seasoned salt and red pepper and sprinkle over both sides of the tilapia and set aside.

In a large skillet heat up your Pompeian OlivExtra Mediterranean Blend olive oil on high heat. Once it's heated, add in all of your diced veggies and saute just until your onions are translucent. Add in seasoned tilapia and allow to cook for around 5 minutes per side or until done throughout.

In the meantime, prepare your box of couscous according to the directions: For a 10 oz box, bring 2 cups of water, a pinch of salt and 1 tsp of OlivExtra Mediterranean Blend olive oil to a boil. As soon as it's up to a boil, remove it from the heat, add in your couscous, stir so that it's mixed evenly into the boiled water and cover it.

Now for these next steps, you'll want to move somewhat expeditiously to make sure everything can be served hot. Your fish should be near done now. Remove the skillet from the heat. It will break easily, so with a spatula, transfer your fish to a glass plate or another skillet. Add your tomatoes to the diced veggies and oil that remain in the skillet and return the heat to high and saute for about 1 minute. Pour this mixture into your couscous. Add in your parsley and capers and stir until everything is evenly distributed into the couscous. Plate your couscous and then your fish and serve.

This recipe serves 4 adults.
