Try This Dinner Recipe!
I've recently discovered a local magazine that is a great information source for local area happenings. Being that the name of the magazine is Chicago Parent, of course it's shares parenting tips AND recipes. Things that are centered around family.
I found this recipe, and made it (my personal picture above) and since 5 out of 6 of us liked it, I thought i'd share it with you.
You will need:
1 pound of lean ground beef
8 ounces of assorted fresh wild mushrooms sliced ( I used the regular off white ones along with portabello)
1 package of wild rice with seasonings ( I used Uncle Ben's)
1/4 cup sun dried tomatoes not in oil sliced (I used some that my hubby found in a resealable bag in the produce section at our local Dominick's
1/2 cup shredded italian blend cheese
Preheat oven to 375. In a large nonstick skillet, add your ground beef and mushrooms. Cook 8-10 minutes making the beef into crumbles. Drain any fat and add wild rice, seasoning packet and tomatoes. Transfer this into a 2 quart baking dish and add the water that the rice instructions call for along with an additional 1/2 cup of water. Cover with foil and place into the oven. Bake for 45-50 minutes or until water is absorbed. Remove foil, sprinkle with cheese and put back into oven about 5 minutes or just until cheese is melted. Plate and enjoy.
